Everyone has a dream but not everyone’s dreams are fulfilled. José Paronella’s dream was to build a castle. He chose a special part of Australia and created Paronella Park. On 5 Hectares beside Mena Creek Falls he built his castle, picnic area by the falls, tennis courts, bridges, a tunnel, and wrapped it up in an amazing range of 7,500 tropical plants and trees (now a lush rainforest!). It opened to the public in 1935. Paronella Park has received multiple Queensland tourism awards, is State and National Heritage listed and is a National Trust listed property.

While offering a full range of Tex-Mex cuisine the signature dish is sizzling fajitas, with a choice of chicken, beef, chorizo or pepe’s. Another favouite is the Tex-Mex Sizzler, a 300 gram eye fillet steak drenched in a mild pepperdew sauce. While we choose to serve mild flavours we are happy to oblige if you prefer medium, hot or extremely hot. Cactus Jack’s Bar & Grill opened in 2006 offers Tex-Mex cuisine. It is a lively themed restaurant also located on Airlie Esplanade, offering a range of seating options including alfresco under umbrellas on the footpath, on the verandah or inside, perhaps in one of the booths. Our culinary offerings are just part of the story. The bar at Cactus Jack’s offers its famous margaritas, shaken or muddled cocktails as well as super sangrias and selected wines and beers. As well as being enjoyed with a meal, they can also be chosen while taking in the beach view or sunset on the raised footpath deck or in the themed bar, with its array of artifacts – each have a story attached.

Located to the east of Melbourne, the Yarra Valley is home to over 80 vineyards around the rolling hills of Lilydale, Coldstream, Yarra Glen, Healesville and Seville. Phillip Island is located about 140 km southeast of Melbourne. The island is connected to the mainland by bridge from the town of San Remo. The island is rich with nature and historical relics, especially the Phillip Island Nature Park, where visitors from the all over the world come to see the Penguin Parade. It’s one of the few places in the world where you can see Little Penguins (Fairy Penguin), the world’s smallest species of penguin.
Phillip Island is also home to the Phillip Island Grand Prix Circuit which hosts a number of Australian motorsport events including the Australian round of the Moto GP.
Or you can relax and enjoy the sandy beaches which are recognised as having some of Australia’s most consistently reliable surf swells.

Daylesford and The Macedon Ranges were formed by ancient volcanic activity, and are located to the north-west of Melbourne.
The region contains Australia’s largest concentration of natural mineral springs in the country.
